I made numerous recipes to come up with this one...the one I consider the best. I have tested and have had others test....this is the best. Ingredients:
275 grams of corn kernels
130 grams of all purpose flour
120 grams of milk
110 grams of sour cream
95 grams of cornmeal
60 grams of melted unsalted butter
2 teaspoons baking powder
2 large eggs
1/2 teaspoon baking soda
2 tablespoons of white sugar
1 teaspoon paprika
1 teaspoon salt
1 teaspoon dried basil
Preheat oven to 350.
Directions:
1)Use blender to pulse corn until coarsely ground
2) In large bowl, whisk together flour, cornmeal, baking powder. baking soda, sugar, paprika and salt
3) In another bowl, whisk the eggs, add sour cream and milk. Add this to 2) and blend together
4)Add corn, melted butter and basil
5) Place in greased pan with parchment paper on bottom. Bake for about 45 minutes until internal temp is about 200 or a little more. If you do not have thermometer, insert toothpick...should come out dry
