I made numerous recipes to come up with this one...the one I consider the best. I have tested and have had others test.... I am told my muffins are the best they ever tasted! RECIPE:
Preheat oven to 350
You will need:
300 grams of brown sugar
225 grams of unsalted butter, melted and allowed to cool slightly
125 grams all purpose flour
85 grams of spelt flour ( or rye if you do not have)
230 grams of semi sweet chocolate chips
90 grams of rolled oats
75 grams of chopped walnuts
70 grams of raw sunflower seeds
20 grams of unsweetened coconut flakes
11/2 teaspoons of kosher salt
1 1/4 teaspoons of baking soda
2 large eggs at room temp. and beaten
1 tablespoon of Vanilla extract
1) Roast the walnut in a preheated oven on a baking sheet for about 8 minutes, then remove and allow to cool. Then place sunflower seeds and coconut on same sheet and roast for a bout 5 minutes. Allow to cool. Then, turn oven off.... you will finish cookies in a couple of hours. See 4)
2) In a large bowl whisk the flours and the salt and baking soda together Then mix in the brown sugar and melted butter. Mix well. Add the eggs and the vanilla. Mix well.
3) Mix in the coconut, seeds, oats and chocolate chips.
4) Use scoop to place on tray with parchment paper, just a little apart from each other. ( You can use a 1/4 cup measuring scoop if you do not have a scoop for cookie making.) Wrap with saran wrap and place in Freezer for a couple of hours.
5) preheat oven to 350. Remove frozen dough balls from tray and place on another tray with parchment paper layer, this time at least 2 inches apart in all directions. They will spread. Allow to cook for about 15 to 20 minutes until brown on edges, still soft in centre. Allow to cool on sheet for about 5 minutes then move to cooling rack. ( Cook as many as you want at that time. Rest can be kept frozen for a month or two in freezer bag, air removed s much as possible )
