NOTE: This is a fund raiser for a local animal rescue. The $2.50 is for the recipe only. It is offered on the honour system. I realize anyone anywhere can copy it. BUT. I made numerous recipes to come up with this one...the one I consider the best. I have tested and have had others test....this is the best. Donation will go to Romina of Fuff Fuff Fuff Wild Bird Sanctuary ( see her Instagram here) . Romina has opened a sanctuary just outside Markdale for injured animals ( started with birds.... hopes to expand when she can afford, to all injured wild animals). Ingredients:

460 grams all purpose flour
460 grams bread flour
6 grams of diastatic malt
700 grams of water
1 tablespoon of salt
2 teaspoons of instant yeast
12 grams turmeric
200 grams of raisins ( golden usually)


Preheat oven to 460 15 minutes before baking


1) Cover raisins in boiling water and allow to stand for about 1 hour. Dry before using, and dust with flour

2) On low heat, warm turmeric in dry frying pan for about 2 to 3 minutes, stirring occasionally. Allow to cool

3) Using stand mixer with bread hook , add the flours, salt, yeast and water and mix on low for about 3 minutes. Then, increase to medium for about 3 minutes. Add the turmeric and raisins and mix for another minute

4) Cover bowl with plastic wrap and allow to proof for about an hour. Remove onto lightly floured surface and fold bread over itself. Return to bowl for another hour or more.

5) divide dough into two and place in greased bread pans with parchment paper on bottom. Allow to proof for about an hour or more until doubled in size
6) Have a cup or so of boiling water ready to place in bottom of oven ( I use a small saucepan with a metal handle) Place bread and water in oven as quickly as possible and bake for about a half hour, until golden brown and internal temp is around 200F

7) Cool on rack for at least an hour.
